Had a nice afternoon and evening at the workshop From Head to Tail. Edwin is an enthusiastic Burgundian with a lot of knowledge and humor. He really takes you into the world of organic pigs. With great dedication he showed how deboning works. He made beautiful pieces of meat by smoking and grilling on the BBQ without seasoning and salt. To learn how to make fresh sausage and real French black pudding, you've come to the right place in Ressen. With the icing on the cake by the chef of Arnhem Sugar Hill Werry, fresh homemade frikandels with sriracha sauce. Even though it was a bit too busy with participants, the atmosphere was very good. I'll still leave a star empty for some improvements for next time, but otherwise highly recommended.

Had an educational day with wild picking boss Edwin Florès. Had a COVID-proof mushroom workshop in Arnhem with a well-organized group. Edwin is a passionate man with character and knows how to convey it in a fun way. Good hot lunch with cheese and wine and for dessert a taster walk through his vegetable gardens. Recommended. Thanks Edwin.

Last weekend I had a very nice workshop with Edwin Flores from Casa Foresta. Beautiful walk, learned and found a lot. The next day we immediately put the knowledge we acquired into practice during our own walk. Edwin leads the workshop in an energetic and funny way, although you shouldn't have too long toes. We also really enjoyed the beautiful vegetable and herb garden.
